Post Thanksgiving Dinner – Tips to Enjoy Turkey Leftovers

Thanksgiving is right around the corner and that means taking time to reflect on all things positive in your life, spending time with family, enjoying well-deserved rest and recuperation, and our personal favourite, eating lots of food! In many households, Thanksgiving results in leftovers that seem to lasts for days. So what can you do to make sure you don’t get bored of eating the same thing? Switch it up! With turkey being the typical star of the show, we’ve compiled some great ways to enjoy this holiday staple.

Turkey Greek Yogurt Salad Sandwiches

Combine plain Greek yogurt, diced celery, and cubed leftover turkey for the filling. The Greek yogurt will add a creamy texture to your sandwich. Using Greek yogurt instead of mayonnaise or sour cream not only reduces the amount of saturated fat in your sandwich or wraps but also increases the amount of protein. For extra nutrition, spread your turkey salad filling on whole grain bread or whole grain tortilla shells for increased fibre.

Vegetable Turkey Stir

Not in the mood for sandwiches? Try making a warm dish such as vegetable turkey fried rice or stir fry. Sauté onions, toss in a variety of freshly cut veggies and cook until almost tender. Add in leftover cooked vegetables and chunks of turkey. Serve over rice for a complete meal. The veggies add loads of different flavours to your meal while also leaving you feeling full for longer.

Turkey Vegetable Omelette Bites

Turkey for breakfast? Why not! Dice some leftover turkey and red or green bell peppers. Combine with beaten eggs and a dash of salt and paper to taste. Fill lined muffin tins with egg/turkey mixture, garnish with green onions and Western Family Italiano Four Cheese Blend. Bake at 350 Degrees Fahrenheit for 20 minutes (cooking time may vary).

Turkey Casserole

Combine leftover turkey with green peas, pesto and whole wheat linguine. Top off the dish with freshly grated cheese. Feeling adventurous? Try making a walnut pesto sauce from scratch by blending handfuls of fresh basil leaves, ¾ cup of olive oil, 5-6 cloves of garlic, salt, black pepper and 2/3 cup of walnuts.

Turkey Lasagna

Heat up your leftover turkey with some pasta sauce and use in place of ground meat in your favourite lasagna recipe. Arrange alternating layers of turkey-pasta sauce with spinach, ricotta and whole wheat lasagna noodles to create a dish that will be perfect for lunch or dinner the next day.

What’s your favourite food? Taco salad! I layer romaine lettuce with tomatoes, avocados for some healthy fats, occasionally some ground turkey seasoned with great spices and fresh herbs, grated cheddar cheese, black beans, a few multigrain tortilla chips and to top it all off, homemade salsa and plain Greek yogurt.
